Veggie Pita Pizza

This Veggie Pita Pizza recipe makes a great quick and easy vegetarian dinner recipe.

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2-3 bell peppers, diced
  • 16 ounces mushrooms, finely chopped (about 5 cups)
  • 1/4 teaspoon garlic powder
  • 2 cups spaghetti sauce
  • 2 cups shredded mozzarella cheese
  • Parmesan cheese, grated (optional)
  • 8 large whole wheat pita pockets


  • Preheat your oven to 350 degrees. Cover your baking sheets with parchment paper, foil or silicone mats.
  • Pour the olive oil into your skillet and turn on medium heat on your stove top. 
  • Add diced peppers and onion to the skillet, sprinkle with the garlic powder and stir. Cook until the peppers and onions are slightly tender, and then add in the mushrooms. Cook until everything is tender, stirring occasionally.
  • Place the pita pockets on your baking sheet and cover evenly with the sauce, veggie mixture and mozzarella cheese. Sprinkle with parmesan cheese (optional).
  • Bake for 10-12 minutes.
