Veggie Pita Pizza

- 2 tablespoons olive oil
- 1 onion diced
- 2-3 bell peppers diced
- 16 ounces mushrooms finely chopped (about 5 cups)
- ¼ teaspoon garlic powder
- 2 cups spaghetti sauce
- 2 cups mozzarella cheese shredded
- Parmesan cheese grated
- 8 whole wheat pita pockets
Preheat your oven to 400°F. Cover your baking sheets with parchment paper, foil, or silicone mats.
Heat a skillet over medium heat, then add olive oil

Add diced peppers and onion to the skillet, sprinkle with the garlic powder and stir. Cook until the peppers and onions are slightly tender, and then add in the mushrooms. Cook until everything is tender, stirring occasionally.
1 onion, 2-3 bell peppers, 16 ounces mushrooms, ¼ teaspoon garlic powder
Place the pita pockets on your baking sheet and cover evenly with the sauce, veggie mixture and mozzarella cheese. Sprinkle with parmesan cheese (optional).
2 cups spaghetti sauce, 2 cups mozzarella cheese, Parmesan cheese, 8 whole wheat pita pockets
Bake for 10-12 minutes.
