Healthy Popsicles

These Healthy Popsicles are easy to make and so nutritious.  Perfect for a healthy summer treat with your kids!

Ingredients

  • 1 ½ cups fresh or frozen blueberries (if frozen, thaw them)
  • 1 cup water
  • 1 lemon

Instructions

  • Place blueberries into your blender.
  • Add in the water.
  • Cut the lemon in half and squeeze the juice of the lemon over the blueberries in your blender.
  • Blend until smooth.
  • Pour the blueberry mixture into your popsicle molds.  Fill to about ¼" from the top of the mold.
  • Wipe off any extra mixture from the popsicle mold.
  • Put the popsicle mold lids on tightly.
  • Freeze 6-8 hours.

Notes

If using frozen berries, thaw the blueberries in a covered bowl overnight in your refrigerator.  Want to thaw them quicker? Place the berries in a bowl filled with cold water and set them on the counter. They should thaw within 5 minutes.
By using thawed frozen blueberries this makes it a recipe that you can make year round...not just at blueberry season!
When pouring the blueberry mixture into your popsicle molds, use something with a spout for easy pouring and less of a mess in the kitchen.
To help the popsicles come out of the mold easier, run warm water over the molds for about 15 seconds water to loosen them. You can also let it sit at room temperature for a few minutes.  Just be careful to not let them sit too long if you do that on a hot day so they don't melt!
How many popsicles you get depends on the size of the popsicle mold you are using.  The mixture will give you just over two cups.  The popsicle molds I used for this recipe measure ¼ cup each so I made some with that mold and then another popsicle mold I had in my kitchen.
Freezing times may vary depending on your freezer and popsicle mold that you are using.  I like to freeze them 6-8 hours to make sure they are completely frozen.
