Thanksgiving Cookies

These delicious Thanksgiving Cookies that look like pilgrim hats will look so festive at your holiday dinner table! Also, they are perfect for kids to help make!

Ingredients

  • 1 package of chocolate chips
  • 1 package of large marshmallows
  • 1 package of Keebler Whoopsy fudge striped cookies
  • white or yellow decorative frosting

Instructions

  • Cover your baking sheet with parchment paper or foil.
  • Place cookies in a single layer on the baking sheet.

  • Melt the chocolate chips in either the microwave or in a medium sized pot on the stove top (notes below on melting the chocolate chips).

  • Insert a dipping tool (or toothpick) into the top of the marshmallow. Dip and swirl the marshmallow into the melted chocolate until the entire marshmallow is covered with chocolate. Drip off the excess chocolate using the edge of the bowl.

  • Place the chocolate covered marshmallow on the center of a cookie and gently press down.
  • Using a spoon or toothpick to hold down the marshmallow, remove the dipping tool (or toothpick) once the marshmallow is on the cookie.
  • Once you have all the hats done, place them in the refrigerator for about 30 minutes or until the chocolate sets.
  • Take the hats out of the refrigerator once the chocolate has set and using the decorative icing, draw a buckle onto each hat.

How to add the buckle to the hats:

  • Add the frosting tip to the decorative frosting tube. (I use one that is a small circle.)
  • Press gently onto the frosting tube and draw a line around the edge of the marshmallow (where it sits on the cookie). Add a small square to the front.

Notes

Melting the chocolate chips:

To melt the chocolate chips in the microwave:
Put the chocolate chips in a microwave safe bowl and heat for 30 seconds and stir.  If more time is needed to melt the chocolate, do 15 second increments, stirring after each one, until the chocolate chips are completely melted.
To melt the chocolate chips on the stovetop:
Pour the chocolate chips into a medium sized pot and heat on low to medium heat.  Stir often until chocolate chips are completely melted.
Either way you melt the chocolate chips, make sure you watch the chocolate chips so they don't overheat.  Overheated chocolate gets clumpy and will not work. 
Tips for melting chocolate chips:
  • Watch the chocolate and stir often as it heats to prevent overheating it.
  • Let it melt until there is still a small amount of chocolate chips still in there and stir the chocolate.  Sometimes you can get the last bit to melt just by stirring the chocolate.
  • The melted chocolate chips should be smooth and creamy.
