Buffalo Chicken Pizza

Delicious homemade pizza made with blue cheese, chicken, cheese and a homemade chicken wing sauce .  Perfect for a twist on pizza night or for watching the game!

  • 3/4 lb. chicken breast, cooked
  • 1 pizza dough (purchased from your local store or pizzeria)
  • 1/4 cup blue cheese dressing (I use Ken's Blue Cheese)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded asiago cheese
  • Parmesan cheese, grated
  • 1-3 tablespoons hot sauce (I use Frank's hot sauce) The amount of hot sauce you use depends on your desired amount of spice (see recipe notes)
  • chives to garnish, optional

Chicken Wing Base Sauce

  • 2 teaspoons celery salt
  • 1/2 tablespoon garlic powder
  • 3/4 teaspoon cayenne pepper
  • 1/2 teaspoon ground cloves
  • 1/2 tablespoon nutmeg
  • 1/2 tablespoon onion powder
  • 3/4 teaspoon salt
  • 1 cup butter, melted


  1. Cook the chicken breasts in the oven at 400 degrees for 20 minutes. Once slightly cooled cut into small pieces.  Take the pizza dough out of the refrigerator and set out on the counter to warm up a little.

  2. While the chicken is cooking, make the chicken wing sauce.  To make the chicken wing base sauce, combine all seasonings in a medium sized bowl and mix well. Add the melted butter to the spices and whisk together. You will need three tablespoons of this base sauce per pizza. The extra sauce can be stored in the freezer.

  3. After chicken is cooked, adjust your oven temperature to 450 degrees.  

  4. In a small bowl combine three tablespoons of the chicken wing base sauce and the hot sauce. Add one tablespoon of hot sauce for mild, two tablespoons for medium and three for hot. Pour over the chicken in a bowl and mix until all the chicken is coated with the chicken wing sauce.

  5. Butter your pizza pan or baking pan. Using your hands, spread out the pizza dough evenly in your pan.  Par-bake the dough for 7 minutes at 450 degrees.

  6. Remove the pizza dough from the oven and spread blue cheese on your pizza dough as you would your pizza sauce.

  7. Spread the chicken over the pizza crust evenly. Sprinkle the parmesan cheese over the chicken, enough to soak up the sauce.  Sprinkle the asiago and mozzarella cheeses over the pizza.

  8. Bake at 450 degrees for 8 minutes or until the edges of the crust are slightly brown and the cheeses are melted.

  9. Let the pizza sit for 5 minutes. Run a knife around the edges and use a spatula to get it out of the pan.  Sprinkle with chives, optional. Cut and serve.

Recipe Notes

Pizza Dough Tips:

Let the dough sit out at room temperature for about 15 minutes to warm up a little bit.

Do not roll out the dough.  Rolling out the dough can make the dough dense and tough.  Use your hands to pull and stretch out the dough.  

If the dough snaps back when stretched it is most likely too cold so let it sit a little longer to warm up.

Recipe tips:

The extra base sauce can be stored in the freezer for another time.  Just warm it up in the microwave when you want to use it next time you make this pizza.

 If you don't have a pizza pan, your baking sheet will work for this recipe.

Par-bake the pizza dough.  Par-bake it for 7 minutes, remove it from the oven, add the toppings and continue to bake for 8 minutes or until the edges are slightly browned and cheeses are melted.  This makes sure the dough is cooked all the way through, especially with it being a heavy pizza.

Variations for the wing sauce:

3 tablespoons chicken wing base sauce + 1 tablespoon hot sauce = mild flavored pizza

3 tablespoons chicken wing base sauce + 2 tablespoons hot sauce = medium flavored pizza

3 tablespoons chicken wing base sauce + 3 tablespoons hot sauce = hot flavored pizza
