Carrot Cake Muffins

Tip: Grate your own carrots - the store bought ones are dry!

Combine dry ingredients with carrots, then combine with wet ingredients & melted butter.

Fill muffin tins and bake until a toothpick comes out clean.

Prepare glaze & set muffins on a wire rack.

Drizzle warm muffins with the glaze.

Use the back of a spoon to help spread the glaze.

Let the glaze harden or enjoy right away.

Made these for Mother's Day brunch and they were delicious.
