Tomato Basil Chicken Salad

Tomato Basil Chicken Salad is a delicious way to combine fresh summer tomatoes and basil with chicken and pasta for a hearty and complete dinner that everyone will love.

Ingredients

  • 2 cups fresh tomatoes diced
  • ¼ cup red onion finely chopped
  • ¼ cup fresh basil leaves torn
  • 8 tablespoons olive oil
  • ½ teaspoon garlic powder
  • salt and pepper to taste
  • 6 ounces whole wheat pasta cooked
  • 1 rotisserie chicken cut or torn into small pieces
  • 2 cups salad greens
  • ¼ cup mozzarella or Parmesan cheese optional

Instructions

  • Stir tomatoes, onion, basil, olive oil and garlic powder together in a bowl. Sprinkle with salt and pepper to taste. Set aside.

  • Cook noodles following directions on box.
    6 ounces whole wheat pasta
  • Combine the cooked pasta, chicken and tomato mixture in a large bowl. Toss in salad greens. Add cheese, if desired.

  • Can be served at room temperature or chilled.
