- 2 cups fresh tomatoes diced
- ¼ cup red onion finely chopped
- ¼ cup fresh basil leaves torn
- 8 tablespoons olive oil
- ½ teaspoon garlic powder
- salt and pepper to taste
- 6 ounces whole wheat pasta cooked
- 1 rotisserie chicken cut or torn into small pieces
- 2 cups salad greens
- ¼ cup mozzarella or Parmesan cheese optional
Stir tomatoes, onion, basil, olive oil and garlic powder together in a bowl. Sprinkle with salt and pepper to taste. Set aside.
