When the grill is hot and your juicy chicken breasts are sizzling away, there’s only one thing left to figure out – what to serve with them! Especially when it’s something as flavorful and summery as my Grilled Bruschetta Chicken recipe. It’s the perfect weeknight dinner.
With balsamic vinegar, fresh basil, chopped tomatoes, and melty mozzarella cheese, it’s basically your favorite appetizer turned into dinner, and it deserves some delicious company on the plate.
Whether you want a veggie side, something comforting like garlic bread, or a crisp salad to keep things light, here are 15 of the Best Side Dishes to round out your grilled bruschetta chicken dinner.
Tasty Sides for Homemade Bruschetta Chicken
1. Roasted Potatoes
Whether you go with crispy wedges or buttery baby potatoes, roasted potatoes are always a win. Add a little garlic, rosemary, or even a sprinkle of Parmesan for a flavor boost.
2. Grilled Asparagus or Roasted Asparagus
Throw the asparagus right on the grill grates next to your chicken for easy cleanup and big flavor. A quick drizzle of balsamic vinegar ties it all together. (You can also pop it in the oven while the grill is cooking.)
3. Garlic Smashed Potatoes
Crispy edges, soft centers, and plenty of garlic. (And butter.) What’s not to love? These are a more indulgent option that still keep things rustic and family-friendly.
4. Pasta Salad with Italian Dressing
Keep it classic with a pasta salad loaded with cucumbers, fresh tomatoes, olives, and your favorite fresh veggies. Drizzle a little Italian dressing over the salad to bring everything together.
If you don’t like Italian dressing, I have a few other pasta salad recipes that you might enjoy as well!
5. Roasted Broccoli
Oven-roasted until crisp-tender, broccoli is a simple but satisfying side that adds color and crunch. It’s even better with a sprinkle of Parmesan cheese just before serving!
6. Garlic Butter Rice
Light, fluffy, and full of flavor, this garlic butter rice is a simple side that soaks up every bit of that tangy balsamic and tomato topping. Sprinkle with Parmesan cheese for a perfect finish.
7. Zucchini Noodles (Zoodles)
Skip the heavy pasta and go for zucchini noodles! Toss them with a little olive oil, garlic, and Italian seasoning for a low-carb, summery side that pairs beautifully with the fresh herbs and mozzarella on the chicken.
8. Grilled or Roasted Squash
Yellow squash and zucchini love the grill just as much as chicken does. Slice them, season them, and let the grill or oven do the work.
9. Garlic Bread or Garlic Toast
Sometimes you just want a buttery, garlicky slice of comfort food. Perfect for sopping up any leftover bruschetta topping.
10. Grilled Potatoes
While the grill is already on, you might as well grill up some potatoes! We make them two different ways – one is spicy and one is a delicious BBQ flavor.
It’s the perfect side dish to make while the grill is nice and hot.
11. Roasted Carrots
Toss them with olive oil, honey, and a pinch of sea salt. Then roast until tender. The natural sweetness plays so nicely with the savory chicken. Or, you can keep it simple with butter.
12. Quinoa Salad
A cold quinoa salad adds a nice filling grain on the side and can be prepped in advance. You can use couscous instead if that’s what you prefer. Load it up with your favorite diced vegetables!
13. Roasted Cauliflower
Toss with garlic, Italian seasoning, and olive oil before roasting. This is a simple side that still feels fancy enough for guests.
14. Arugula or Mixed Greens Side Salad
A handful of greens tossed with lemon juice, balsamic vinaigrette, and shaved Parmesan. It’s light, refreshing, and has just enough bite to balance your meal.
I have a homemade balsamic vinaigrette that would pair perfectly with this chicken recipe!
Or, keep the flavors going with a simple Caprese salad of cherry tomatoes, mozzarella cheese, and basil. Drizzle with a tangy balsamic glaze for that signature finish.
15. Balsamic Roasted Brussels Sprouts
If you’re a Brussels sprouts fan, this is a must-try. Roasting them brings out their natural sweetness, and a splash of balsamic vinegar at the end makes them shine.
As an honorable mention, garlic butter pasta or parmesan orzo always goes well with fresh tomato bruschetta – the tomato mixture coats pasta nicely and who doesn’t like butter… but I like to try to keep it light in the summer!
What to Serve with Grilled Chicken Bruschetta
These sides are easy to mix and match depending on your mood or what’s already in your fridge. Have a light dinner with a salad and grilled veggies, or make it heartier with smashed baby potatoes and garlic bread.
Either way, you’re set up for a delicious, summery dinner packed with flavor, texture, and a little Italian flair.
