Blueberry Banana Muffins

Ingredients – blueberries – three bananas – two eggs – milk – vanilla extract – all-purpose flour – brown sugar – butter – baking powder – salt – ground cinnamon

Preheat oven to 400°F.

Mash bananas with the back of a fork. Place mashed banana into a large mixing bowl. Add in the eggs, then add in the milk & vanilla extract.

In a large bowl, blend together the flour, sugar, butter, baking powder, salt, & cinnamon.

Slowly add in the dry ingredients to the banana mixture. Mix just until all the ingredients are combined & you no longer see flour in the mix.

Using a spatula, gently fold in the blueberries.

Use fresh blueberries when they are in season - so good!

Make streusel topping from butter, cinnamon, & brown sugar.

Spoon batter into muffin pan and top each muffin with streusel.

Bake muffins for 25 minutes.

Let cool, then enjoy.
